In-Car video help needed

So I have some specific needs, basically I am after a two or three camera setup.  We race a rally car so having a rollcage mounted digital mini-dv camera really isn't an option, the vibration alone would destroy a normal camera in no time, and I would like a system that we could move into other cars.

What I am looking for is a recorder of some kind that can deal with multiple video and audio feeds.  the recorder would be remotely mounted in a pelican case or the like so it wouldn't be destroyed by water or dirt.

We used a lipstick camera into a vcr for the last rally with less than desirable results both for the camera and in the quality of video that was recorded.

whadda ya think?

I got my camera (I'm on my second one) off of refurbdepot.com and is a minidvr.  Each one has been $120 and I use the poly cage mount.
