So what options do I have?

So far a TT race header and TT exhaust without a cat is cheaper then trying to locate a Rocco manifold, an aftermarket downpipe, high flow cat, and exhaust.

DO NOT get a TT race header.  That is unless it's a track only car.  They're loud, they leak, and they aren't that durable and you'll only gain a couple HP over a downpipe.  I'd look at TT's street header system, Danny and Borsky are using them with good success.
If it was mine:
TT street header
TT 2.25" exhaust with Borla

I had a race header on my old one with poly mounts and it was fine.

However, I wouldn't do it again.
I actually lost hearing because of how retardedly loud it was.

Yup, men can deal with them.

If by that you mean "men" can deal with incessant electrical problems, shoddy build quality, no suspension travel, and a bunch of hoity-toity richie fucks who farm out their $20,000+ project Rabbits to tuners, then you can be a man all you want.
Sorry, I don't like dealing with annoying shit more than I have to.

I just got sick of cars period.
I haven't owned one in almost a year.
No VWs since the Rallye Golf.
Too much money, too little reward.

Edit: No, mopeds aren't manly at all. They're faggy as shit, but they're a fuckton of fun.

I still have my cars, but my bike is faster than any streetable VW I'll ever own.  I'm not abandoning projects, just throwing them on the backburner until I can afford them.
